Preparation

  1. For the fries: Preheat oven at 425⁰F. Wash the potatoes, do not peel, and cut in 1cm diameter fries. Put fries in large bowl, drizzle with olive oil, add salt and pepper as well as a pinch of smoked paprika and garlic powder (if you like). Toss fries to coat and let sit for 10-15 minutes (while oven heats-up). Spread out fries on baking sheet, put in the oven and bake for 20 to 25 minutes, turning once at half-time.
  2. Sauce and toppings: Meanwhile prepare the Ultimate Poutine Sauce, sauté the cut onion, bell pepper and sliced mushrooms together, then add the cut up hot-dogs, sauté to brown (5 mins) then finish by adding the diced smoked meat and pepperoni slices just to heat through.
  3. Assemble: To assemble the poutine follow these steps; Fries + a little Sauce + Cheese + Toppings + Cheese + A LOT OF SAUCE! For an extra kick, guess what we like to top it all with? Yup, you guessed it Pickled Red Onions!

If you always have these on-hand, you can the sky’s the limit…well, almost.
