These refrigerator pickles can be made year-round and they don’t require any special equipment or sterilization. They take less than 15 minutes to prepare, and unlike regular pickles, you can make and enjoy them the very same day!

Ingredients

  • 6-8 Lebanese cucumbers cut in 4 lengthwise
  • 1 750ml to 1L glass Jar
  • 250ml white vinegar
  • 150ml water
  • 2 tablespoons sugar
  • 1 tablespoon kosher salt
  • 2 cloves garlic, cut in two
  • 1/2 teaspoon mustard seeds
  • 1/8 teaspoon hot pepper flakes
  • 2 sprigs fresh baby dill

Preparation

  1. Put mustard seeds, red pepper flakes, garlic and dill in glass jar then top with the cucumbers (cut in 4 lengthwise).
  2. In a saucepan, bring vinegar, water, sugar and salt to a boil. Remove from heat, and pour in the jar, over the cucumbers, making sure to cover them. Let them marinate for one (1) to o24 hours before using. Once cooled, put a lid on the jar and refrigerate for up to 1 month.

You can use this quick pickle recipe for almost any kind of cucumber, thinly sliced for sandwiches, or in rounds. You can also have fun with it and add onions, cauliflower florets and red bell pepper pieces for a house mix that the whole family will enjoy with any meal!
