There is nothing else like a loaded sub and we bet that once you’ve tasted this one, there will be no going back, guaranteed!

Ingredients

  • 4 Sub rolls (or 2 + 2 hot dog rolls for smaller appetites)
  • 200g Thinly sliced Lesters pepperoni
  • 250g Lesters Roast Beef, thinly sliced
  • 1 Onion, thinly sliced
  • 1 Bell pepper (red or green), thinly sliced
  • 1 Container sliced mushrooms
  • 8 Slices Mozzarella cheese
  • ½ Head of Iceberg lettuce or 1 romaine, shredded
  • 1 Large tomato, sliced in 8

 

For the ‘not so secret’ sauce

  • 3 tablespoons olive oil
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 1 teaspoon oregano
  • Ground pepper to taste

Preparation

  1. Preheat the oven to 400⁰F. Open the breads, place on a baking sheet and arrange the cheese to cover.
  2. Slice the vegetables and sauté them in a little oil to soften them (set aside). In the same pan, brown the pepperoni slices, then those of roast beef a few seconds on each side, (we keep all the flavors this way) arrange the steak slices over the cheese, on the buns, then the pepperoni and cover with the vegetables. Place in the oven for 7-10 minutes.
  3. Meanwhile combine the oil, lemon juice, salt, pepper, garlic powder and oregano. Shred the lettuce into thin strips and slice the tomatoes.
  4. Remove the subs from the oven, garnish with lettuce, tomato slices and house dressing.

Make ahead Subs

You can prepare the subs for your lunch boxes ahead of time: Prepare all the ingredients according to recipe directions and assemble the subs, omitting the tomatoes and dressing and without putting them in the oven. Put the sliced tomatoes drizzled with the dressing in a small container and add them to your sub just before eating it. You can enjoy this sub both cold and hot.
