Ingredients

350 g of Lesters shaved steak, reheated in a skillet or microwave 

2 cups cooked rice (jasmine or basmati) 

1/2 cup canned black beans, rinsed 

1/2 cup corn kernels, drained 

1 avocado, sliced 

1/2 cup bell peppers, sliced 

1/2 cup diced tomatoes 

1/4 cup chopped red onions 

1/2 cup shredded iceberg lettuce 

1/2 cup shredded cheddar cheese 

2 tbsp sour cream or plain Greek yogurt 

Fresh cilantro (for garnish) 

Lime wedges (for drizzling) 

Tortilla chips (on the side or for crunch)

Preparation

  1. In a bowl, spread the warm rice at the bottom.
  2. Arrange the black beans, corn, avocado, bell peppers, tomatoes, lettuce, red onions, and cheese evenly around the bowl.
  3. Place the hot shaved steak in the center.
  4. Top with sour cream, fresh cilantro, and a few tortilla chips.
  5. Drizzle with lime juice just before serving.
