Ingredients

4 slices of bread (country-style or thick sandwich bread)

8 slices of Lesters smoked meat

4 slices of mild cheddar, Swiss, or mozzarella

2 tbsp butter

1 tbsp yellow mustard or grainy mustard (optional, but delicious!)

Preparation

  1. Butter one side of each slice of bread, then spread mustard on the other side if desired.
  2. Place one slice of cheese on two of the bread slices, mustard side up.
  3. Add the smoked meat slices, then top with a second slice of cheese.
  4. Close the sandwiches, buttered side facing outward.
  5. Cook in a skillet over medium heat for 3 to 4 minutes per side, pressing gently and flipping once the bread is golden and the cheese begins to melt.
