Mexican recipes are growing in popularity and breakfast is no longer an exception. Inspired by a taqueria classic, this dish combines the flavors of Mexico with Quebec favorites, and hits all the right notes. I bet you it will quickly become a household stable.

Ingredients

  • 8 small (4-6″diameter) corn or wheat flour tortillas
  • 4 eggs
  • 2 tablespoons vegetable oil
  • ½ red bell pepper, diced
  • ½ onion, diced
  • ½ teaspoon ground cumin
  • ½ cup black beans
  • 1 package (100g) Lesters Smoked Meat, chopped
  • 1 sliced avocado
  • 1 diced tomato
  • Crumbled feta cheese
  • Salsa and cilantro for serving

Preparation

  1. Prepare the vegetables as directed, pour a little lime or lemon juice on the avocados so they don’t brown, set aside. Heat the smoked meat as directed on package, chop it and set aside.
  2. Heat the oil in a pan and sauté the diced bell pepper and onion. Add the black beans, black, ground cumin and a few drops of lime juice mix, heat through and set aside.
  3. In another hot pan, toast the tortillas for a few seconds on each side, place 2 tortillas on each plate. Fry the eggs, put an egg on 2 tortillas then top them with smoked meat, black beans, avocado, cilantro and crumbled feta cheese, add a few dashes of hot sauce and serve with a lime wedge, store-bought salsa and, you guessed it, pickled red onions!

You would love this recipe to go? Nothing could be easier, prepare the black beans as directed (you can even make them ahead and keep them in the fridge). Scramble the eggs with the smoked meat, place all the ingredients in the center of the tortillas; eggs and smoked meat, beans, omit the tomatoes but add salsa, feta or grated cheese and cilantro, fold up each edge then roll up the tortilla, wrap style and you are good to go!
