Ingredients

6 Lesters Jumbo Original hot dog sausages
6 brioche hot dog buns
1/2 English cucumber, cut into fine julienne
1/2 cup fresh cilantro leaves
1–2 jalapeños, thinly sliced (optional)

For the Pickled Vegetables:
1 carrot, cut into fine julienne
1/2 small daikon, peeled and cut into fine julienne
1/3 cup rice vinegar
3 tbsp sugar
2 tbsp water
Salt, to taste

For the Spicy Mayo:
1 cup mayonnaise
2 tbsp sriracha
1 tsp lime juice
1/2 tsp fish sauce

Preparation

  1. Preheat the barbecue to medium high heat (about 220 °C / 425 °F).
  2. In a bowl, combine the carrot, daikon, rice vinegar, sugar, and water. Season with salt. Let marinate for 15 minutes.
  3. In a small bowl, mix together all the spicy mayo ingredients. Refrigerate.
  4. Place the sausages on the hot, oiled grill. Cook for 5 to 7 minutes, turning them several times.
  5. Place the buns on the hot, oiled grill. Toast for 30 seconds to 1 minute per side.
  6. Fill each bun with a grilled sausage, pickled vegetables, cucumber, cilantro, spicy mayo, and jalapeños if desired.
