Ingredients

1/2 stick of Lesters Original Pepperoni (225 g), thinly sliced

3 tbsp olive oil

6 white mushrooms, sliced

1/3 green bell pepper, thinly sliced

8 slices of mozzarella

4 tortillas (25 cm / 10 in diameter)

1/2 cup pizza sauce

2 tsp Italian seasoning

Preparation

  1. In a large non-stick skillet, heat one-quarter of the oil over medium heat. Spread one-quarter of the pepperoni slices, mushrooms, and green pepper in the skillet, like topping a pizza.
  2. Cook for 2 to 3 minutes, until the pepperoni begins to brown. Cover the pepperoni and vegetables with two slices of mozzarella.
  3. Place a tortilla over the mixture and press gently with a spatula so the cheese sticks to the tortilla. Cook for 1 minute, then flip and lightly grill the other side for about 1 minute.
  4. Spread one-quarter of the pizza sauce over the tortilla and sprinkle with Italian seasoning.
  5. Transfer to a cutting board, roll up, and slice in half.
  6. Repeat to make four pizza wraps.
