Preparation

  1. In a large skillet, heat the canola oil over medium heat. Reheat the shaved steak for 3–4 minutes, stirring.
  2. Add 1/3 cup of the barbecue sauce and the red onion. Stir to coat the meat well with the sauce. Remove from heat.
  3. On a lightly floured work surface, stretch the dough into a 30 cm (12 in) circle.
  4. Sprinkle a pizza peel or baking sheet with semolina flour, then place the dough on top.
  5. Spread the remaining barbecue sauce (100 ml – about 6 tbsp) over the dough, leaving a small border. Top with cheese. Evenly distribute the steak mixture, pineapple pieces, and jalapeño slices.
  6. In a pizza oven: Preheat according to the manufacturer’s instructions. Transfer the pizza to the oven using the peel. Cook for a few minutes, rotating the pizza a quarter turn every 30 seconds, until the crust is golden brown.
  7. In a conventional oven: Preheat to 230 °C (450 °F). Place the baking sheet in the oven. Bake for 10–12 minutes, until the crust is golden brown.
  8. Remove from the oven and sprinkle with cilantro.
