Ingredients

1 400 g package Lesters Sliced Montreal Smoked Meat

1/2 cup 14% sour cream

2 tsp. fresh lemon juice

2 limes

2 avocados, cubed

Salt and pepper to taste

8 small tortillas

1/3 cup chipotle pepper sauce (La Costeña type)

approx. 2 cups chopped romaine lettuce

1 tomato, diced

1/4 cup chopped fresh cilantro

100 g (3 1/2 oz) crumbled feta cheese

1/4 cup salsa verde

Pickled red onions to taste (optional)

Preparation

  1. In a bowl, whip sour cream with lemon juice.
  2. Squeeze juice from a lime over another bowl.
  3. Place avocado cubes in bowl with lime juice. Season with salt and pepper and toss gently.
  4. Cut smoked meat slices into strips about 2.5 cm (1") wide.
  5. Heat a skillet over high heat. Toast one tortilla at a time, 30 seconds to 1 minute on each side.
  6. Meanwhile, heat chipotle sauce in another skillet over medium heat. Add the smoked meat strips and heat, stirring, for 2 to 3 minutes.
  7. Top tortillas with lemon sour cream, lettuce, smoked meat, tomato, cilantro, avocado and feta cheese.
  8. Cut remaining lime into quarters.
  9. Serve tortillas with lime wedges, salsa verde and, if desired, pickled red onions.
