30 ml (2 tablespoons) olive oil

1 yellow onion, chopped

2.5 ml (1/2 tsp.) chili flakes

Salt and pepper to taste

1 Lesters Original pepperoni stick

2 peppers of various colors, diced

1 container (227 g) white mushrooms, sliced

500 ml (2 cups) cooked quinoa

500 ml (2 cups) tomato sauce of your choice (marinara, arrabbiata…)

500 ml (2 cups) chopped baby spinach

1/2 ball fresh mozzarella, 250 g, sliced

Star product


  1. Heat oil in a large skillet over medium heat. Cook onion and chili flakes for 5 minutes. Season with salt and pepper.
  2. Add sausage, peppers and mushrooms, then continue cooking for 5 to 7 minutes.
  3. Stir in cooked quinoa, tomato sauce and spinach. Continue cooking for a further 3 minutes.
  4. Place mozzarella slices on top. Continue cooking for a further 3 minutes, until the cheese has melted.
