Ingredients

24 dill pickle slices (medium size, drained)

3 slices of Swiss cheese (cut into 4 to make 12 pieces)

1 cup shredded cabbage (green or red, your choice)

3 tbsp Thousand Island dressing

4 slices of Lesters smoked meat

¼ tsp salt

Pepper to taste

Preparation

  1. Drain and pat the pickle slices dry with a paper towel to prevent sogginess.
  2. Lay the pickle slices flat on a plate.
  3. In a bowl, mix the shredded cabbage with Thousand Island dressing. Adjust the amount of dressing to your liking; avoid oversaturating the mixture.
  4. Place a piece of Swiss cheese on top of a pickle slice.
  5. Add a tablespoon of the cabbage salad on top of the cheese.
  6. Cut each slice of smoked meat into three pieces widthwise. Fold each piece into quarters to form a small packet.
  7. Place the folded smoked meat on top of slaw.
  8. Cover each bite with a second pickle slice.
  9. Insert a toothpick in the center to hold everything together.
