Ingredients

200g of Lesters Round Smoked Meat, cut into cubes
2 cans of navy or other type of beans, rinsed and drained
¼ cup of ketchup
2 Tbsp.of yellow mustard
½ cup of fancy molasses
2/3 cup of water
1 diced onion
2 tablespoons of butter
1 bay leaf
1 teaspoon of salt
½ teaspoon of ground pepper

Preparation

  1. In a medium-size, heavy-pot, melt the butter and saute the onion until soft.
  2. Add the water, ketchup, mustard, molasses, bay leaf, salt, and pepper, and bring to a boil.
  3. Stir in the drained beans.
  4. Let simmer on medium-low heat until the liquid has reduced by half.
  5. Stir in the cubed smoked meat and let simmer on medium-low heat for 15 to 20 minutes, until the mixture thicken and beans are nicely coloured/flavoured
  6. Adjust seasoning to taste.
  7. For a hearty, satisfiying meal, serve baked beans in small emptied pumkins with fresh country-style bread and butter
