Ingredients

  • 400 g (approx. 1 lb) Lesters roast beef, thinly sliced
  • 15 ml (1 tablespoon) vegetable oil
  • 1 large yellow onion, thinly sliced
  • 12 mini brioche slider buns
  • 80 ml (1/3 cup) mayonnaise
  • 45 ml (3 tbsp.) Dijon mustard
  • 310 ml (1 1/4 cups) Québec smoked cheese, grated
  • 45 ml (3 tbsp.) melted butter
  • 1 clove garlic, crushed or minced
  • A few drops of hot red pepper sauce (Tabasco type)
  • 5 ml (1 tsp.) dried parsley
  • 5 ml (1 tsp.) Montreal steak spices

Preparation

  1. Preheat oven to 190°C (375°F).
  2. Heat oil in a skillet over low-medium heat. Cook onion for 10 minutes, until lightly browned. Remove from heat.
  3. Cut bread in half lengthwise. Reserve tops.
  4. In a bowl, mix mayonnaise with Dijon mustard.
  5. Brush mustard mayonnaise over bottom of loaves. Top each with roast beef, onion and smoked cheese.
  6. Place filled loaf base on a parchment-lined baking sheet. Bake for 7 to 8 minutes, until golden brown and cheese is melted. Remove from oven.
  7. Meanwhile, in a second bowl, combine melted butter, garlic, hot sauce, parsley and steak spices.
  8. Brush reserved bread tops with melted butter mixture. Cover bun base with bun top. Continue baking in the oven for 3 to 4 minutes, checking occasionally to prevent burning. Remove from oven.
