One pan, no fuss, no mess, and easy clean-up to boot! This easy to prepare crowd pleaser requires only one sheet pan. Make it on weeknights for a satisfying, and nourishing dinner or prepare it for your guests and family on weekends, accompanied by toasted crusty sourdough bread and a leafy green salad. Use whatever vegetables you have on-hand, the secret it to cut them in bite-sized pieces, according to the cooking time they require ie: cut potatoes smaller than peppers since they take longer to cook, and to avoid spoilage, use the not-so-pretty vegetables and whatever slightly wilted vegetables you have on-hand, no one will know and it will taste great!


1/2 package Lesters fully cooked, sliced Italian sausage

1/2 package Lesters Wavy pepperoni

1/2 to 1  eggplant, depending on size

1 zucchini

2 sweet peppers (various colors)

2 Roma tomatoes

1 sweet potato

2 sprigs fresh rosemary

1/2 Teaspoon dried oregano

1/2 Teaspoon granulated garlic

2 Tbsp olive oil

Salt and pepper to taste

  1. Preheat oven to 375F
  2. Cut the sweet potato in 1/2inch cubes, the eggplant in 3/4inch cubes, the peppers in 1inch cubes and the Roma tomatoes in quarters, place in the middle of the baking sheet (on parchement paper for easier clean-up). Add the sliced mild Italian sausage, wavy pepperoni and rosemary. Drizzle the olive oil over the vegetables and meat, add the granulated garlic and dried oregano, season with salt and pepper. Toss to coat and spread out on baking sheet.
  3. Put the baking sheet in the over and cook for 20 to 30 minutes (ovens vary) until the vegetables are fork-tender and starting to color (caramelize).
  4. If you are a cheese fan (who isn't?), you can add your favourite shredded cheese for the last 5-to-10 minutes of cooking so it will be melted and bubbly, yum!
  5. Enjoy as is, serve over rice or pasta and/or with bread, to soak up the cooking juices.
