Easy to prepare for lunch or dinner, this soup is satisfying and can be prepared ahead of time, prepare bowls and add broth just before serving!

Ingredients

1 package Lesters fully cooked, sliced mild Italian sausage

2 carrots, julienned

4 green onions, sliced

1/2 cup thinly sliced red pepper

1/2 cup sugar snap peas, snipped

1/2 cup bean sprouts

1 Tbsp chopped ginger

1 Tbsp minced garlic

4 baby bok choy, cut in 2 (or 2 cups washed baby spinach)

4 eggs (soft boiled)

2 85g packages instant Ramen noodles

7 cups vegetable broth

Salt and pepper, and sesame seeds (to taste)

Preparation

  1. Cut vegetables as described, set aside,
  2. Soft boil the eggs for 7 minutes
  3. Heat sesame oil in medium saucepan, and sauté the sliced sausages just to brown (about 2 min, each side) and set aside, Add the ginger, green onions and garlic to saucepan and cook for just a minute. Add broth and boil for about 15 minutes to infuse the flavours. Add the Ramen noodles the last 5 minutes.
  4. Meanwhile prep the bowls by putting all the cut vegetables, add the noodles, top with reserved sliced italien sausages, and pour the boiling hot broth over. Place one egg (cut in halves) ot top of each bowl and garnish with sesame seeds (if using), Enjoy!
